Ingredients

  • 250 grams granulated sugar, plus extra for rolling
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking powder, and sea salt until the leavening agent is evenly distributed.
  3. Using an electric mixer with a paddle attachment, beat the cool room-temperature butter and granulated sugar for 2 to 3 minutes until the mixture is pale and fluffy.
  4. Scrape down the sides of the bowl and add the whole egg, the extra egg yolk, and the vanilla extract, beating until fully combined and creamy.
  5. Set the mixer to the lowest speed and slowly add the dry ingredients, mixing only until the white streaks of flour have just disappeared.
  6. Portion the dough using a 3-tablespoon cookie scoop, roll into smooth balls, and coat each ball thoroughly in a shallow dish of extra sugar.
  7. Arrange the dough balls on the prepared sheets about 2 inches apart and gently flatten each one slightly with the bottom of a flat measuring cup.
  8. Bake for 10 to 12 minutes until the edges are just set but the centers remain soft, then let them rest on the sheet for 5 minutes before moving to a wire rack.
